JOB DESCRIPTION: The Cellar Production Assistant is responsible for assisting the Distillery GM with all aspects of production and will assist with production operations, cellar management, filtration, finishing, bottling, and canning. This role includes responsibilities such as supervising operations personnel and ensuring strict adherence to all sanitation and safety regulations mandated by R6 DISTILLERY, the FDA, OSHA, California ABC, TTB, and the State of California.


Production and packaging of sterile, non-alc beverages, as well as spirits, and RTDs.

Develop, implement, and ensure compliance with company mandated programs and procedures inclusive of, but not limited to, Safety Programs, Operating Procedures Manual and Training Program, Inventory Tracking and Control, Accident/Incident Reports, HAACP, and all facility SOPs.

Adhere to QA/QC program and mechanisms for proactive feedback for downstream quality control.

Complete production documentation per company standards.

Attend management meetings to update in-house managers on production issues and concerns. Proactively bring corrective areas with an implementation plan to management.

Exceptional working knowledge of the brewing/cellaring process, including the ability to create high quality products (no flaws, sterile).

Operate canning and bottling equipment to maintain acceptable standards with minimal deviation.

Assist Distillery GM with supply chain, inventory, of raw materials, and product sourcing, management, and accounting.

Supervise cleanliness and sanitation of all equipment, lines, tanks, and work areas to maintain consistent quality.

Possess fundamental knowledge of plumbing and machinery mechanics/maintenance, brite tanks, fermentors, storage tanks, etc.

Possess good beverage knowledge and sensory skills, including distinguishing flavors (including off flavors, taints, flaws) and colors.

Support and communicate with all departments influenced by distillery operations, including, but not limited to, Safety, Bottling/Canning, Administration, and the Founders. Ability to effectively convey information, manage time, prioritize tasks, work with and delegate to/from others, and negotiate and achieve resolution.

Passionate about beverage production and operations.

At least 2 years minimum experience in a production brewery/distillery/packaging facility. This should include a solid working knowledge of brewery/distillery operations: packaging, quality control, loss prevention, preventative maintenance, ingredients, and inventory

Familiar with the sanitation requirements of a brewery with the ability to prevent and respond to microbiological activity. Well versed in CIP and SIP practices especially with regard to canning, bottling, and transfers. Velcorin dosing experience is a plus.

Canning line operations experience required. Wild Goose canning line knowledge is greatly preferred.

Familiarity with brewing, distilling, and co-packing hardware and equipment.

Brewing Degree from accredited brewers program (Siebel Institute, UC Davis, etc.) a big plus.

The ability to frequently lift 60 lbs.

Forklift certification preferred

Must be available nights and weekends, if necessary

Experience with carbonation and brite tank management
